Fruit Loaf (1)


8 fl oz (240ml) water
4 oz (100g) margarine
4 oz (100g) sugar
8 oz (225g) dried fruit
1 tsp mixed spice
1 tsp bicarbonate of soda
2 eggs, beaten
8 oz (225g) S. R. flour


1. Simmer all ingredients (except eggs and flour) in pan for 5 minutes.
2. Remove from heat and leave to cool.
3. Add beaten eggs and flour and mix well.
4. Spoon mixture into a greased and base-lined 2 lb loaf tin.
5. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 11/4 hours.
