French Beef and Tomato Soup

Serves: 4+


beef on the bone
chopped onions
chopped garlic
14 oz/400g can chopped tomatoes
packet or can of Passata
beef stock cube
bay leaf
boiling water


1. Brown a chunk of beef on the bone. Brown chopped onions lightly.
2. Add as much chopped garlic as you fancy.
3. Add tomatoes, Passata, stock cube and bay leaf.
4. Add boiling water until consistency looks right.
5. Season to taste and simmer for about 1 hour.
6. Remove bay leaf.
7. Take meat out of pan and remove bone.
8. Chop meat back into soup in small pieces and serve.

Note: Experiment with quantities. This easy recipe works every time and is always popular!
