Fish Pie

Pre-heat oven to: 200°C/400°F/Gas 6
Time in oven: 30-35 minutes
Serves: 4


1 lb/450g smoked haddock and cod
4 tblsp milk
1 oz/25g butter
1 oz/25g flour
¼ pt/150ml apple juice
1 tsp parsley, chopped
4 hard boiled eggs, roughly chopped
salt and pepper
1 ¼ lb/600g small potatoes, parboiled
2 tblsp cooking oil


1. Poach fish in milk for 3 minutes, drain and reserve milk.
2. Melt butter in saucepan, add flour, stir and cook for 1 minute.
3. Gradually add milk and apple juice.
4. Continue stirring until sauce reaches boiling point.
5. Flake fish and fold into sauce along with parsley and eggs. Season to taste.
6. Transfer to oven-proof dish, arranging potatoes round edge of dish.
7. Brush with oil and bake in oven.
