Eggless Spicy Apple Cake


4 oz (100g) butter or margarine
4 oz (100g) sugar
3/4 cup stewed apple, warmed
1 level tsp bicarbonate of soda
6 oz (175g) S. R. flour
1 level tsp cocoa
1/4 level tsp nutmeg
1/2 level tsp cinnamon
3 oz (75g) seedless raisins


1. Cream butter and sugar.
2. Mix soda into apple and add to creamed mixture.
3. Stir in flour, cocoa and spices mixed with the fruit.
4. Spoon mixture into a lined 7″ cake tin.
5. Bake in a pre-heated oven 150°C/300°F/Gas 2 for 1 hour.
6. Remove from tin when cold, cover with glacé icing and dust with ground cinnamon.
