Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 1 hour
4 thighs or roasting joints of chicken
salt and freshly ground black pepper
1 tblsp apricot jam
1 tsp Dijon mustard
pinch of cayenne pepper
1 large clove garlic, crushed
3 tblsp tomato ketchup
1 tblsp Worcestershire sauce
1 tblsp soy sauce
1. Season joints and arrange in shallow oven-proof dish.
2. Mix jam, mustard, pepper and garlic until smooth.
3. Add tomato ketchup, Worcestershire sauce, soy sauce, salt and pepper and pour over chicken pieces, coating them evenly.
4. Place lid on dish and bake in oven.
