Demerara Shortbread


8 oz (225g) butter
4 oz (100g) icing sugar
8 oz (225g) S. R. flour
4 oz (100g) cornflour
demerara sugar


1. Cream butter and icing sugar and add flour and cornflour.
2. Divide into 4 sausage shapes and roll in demerara sugar.
3. Cut in slices and lay, well apart, on a greased baking tray.
4. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 20-25 minutes.
