Date Tray Bake
8 oz (225g) margarine
1 small cup sugar
8 oz (225g) dates, finely chopped
1 egg, beaten
10 oz (275g) tea biscuits, crushed
1. Melt margarine, sugar and dates in a pan.
2. Allow to cool and add egg and essence.
3. Bring to boil, then remove from heat and mix in biscuits.
4. Press mixture into a Swiss roll tin.
5. Sprinkle with caster sugar when cold and cut into squares.
