Date and Orange Loaf


8 oz (225g) pkt sugared dates
4 fl oz (120ml) water
8 oz (225g) soft brown sugar
3 oz (75g) margarine
2 tblsp orange juice
grated rind of 1 orange
1 egg, beaten
8 oz (225g) S. R. flour
1 tsp cinnamon


1. Simmer dates and water gently in a pan until dates are pulpy.
2. Add sugar and stir until dissolved.
3. Remove from heat, add margarine and mix well.
4. Add juice and rind from orange and leave to cool.
5. Gradually add egg and flour (sieved with cinnamon) to mixture.
6. Spoon mixture into a greased and base-lined 2 lb loaf tin.
7. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 1 ¼ hours.
