Cuban Fried Bananas


8 oz/225g long grain rice
4 bananas
butter or oil for frying
1 large mango
15 oz/420g can red kidney beans


1. Cook rice as per instructions and allow to cool.
2. Cut bananas in long diagonals, frying to a nice crisp, as you would fried potatoes.
3. Peel mango and chop finely.
4. Drain kidney beans and add to rice with chopped mango.
5. Serve with bananas and a green salad.
