Crunchy Romaine Toss

Serves: 8-10

Ingredients

9 oz/200g plain instant noodles
8 oz/225g chopped walnuts
2 oz/50g butter
1 head broccoli
1 head romaine lettuce
4 spring onions, chopped
Sweet and Sour Dressing:
4 fl oz/125ml vegetable oil
3 ½ oz/100g sugar
2 fl oz/75ml red wine vinegar
½ tblsp soy sauce salt and pepper

Method

1. Break up noodles.
2. Brown walnuts and noodles in butter and cool.
3. Chop broccoli into bite-sized pieces.
4. Wash lettuce and break into pieces.
5. Combine all ingredients, pour dressing over salad and toss.
