Cressington Soda Bread
Pre-heat oven to: 190°C/375°F/Gas 5
Time in oven: 1 hour in total
8 oz/225g plain flour
8 oz/225g wholemeal plain flour
1 tsp bicarbonate of soda
2 tsp cream of tartar
1 tblsp caster sugar
½ tsp salt
1 tblsp olive oil
8 oz/225g natural yoghurt
¼ pt/150ml milk
1. In a large bowl sift together the flours, bicarbonate of soda, cream of tartar, sugar and salt.
2. Mix together olive oil and yoghurt and stir into dry ingredients with a wooden spoon, adding enough milk to make a soft dough.
3. Place dough in a greased and lined 2 lb/900g loaf tin, bake for 45 minutes then turn oven down to 180°C/350°F/Gas 4 for another 15 minutes.
4. Leave to cool for 2 minutes then turn out on to cooling tray.
