Cod with Orange Sauce


4 cod cutlets, well seasoned
1 oz (25g) butter
1 oz (25g) white breadcrumbs
1 oz (25g) cheese, grated
3 small oranges, peeled and thinly sliced
1 tblsp oil
1 tblsp lemon juice
1 bunch watercress


1. Dot fish with half the butter and grill for 5 minutes.
2. Mix breadcrumbs and cheese together.
3. Turn cutlets, cover with cheese mixture, dot with remaining butter and grill for a further 5 minutes.
4. Meanwhile mix orange slices with oil and lemon juice.
5. Place cutlets on long serving dish.
6. Drain oranges, arrange around fish and garnish with watercress.
