Coconut Ice Squares


8 oz (225g) margarine
4 dsp caster sugar
2 cups plain flour
2 cups cornflakes
1 1/2 cups coconut


1. Melt margarine and mix well with dry ingredients in a bowl.
2. Press into a greased 11″ x 7″ Swiss roll tin.
3. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 20-25 minutes.
4. Ice while warm, using icing sugar, boiling water and a drop of vanilla essence.
5. Cut into fingers or squares when cool.
