Clam Omelette


3 eggs, beaten
1/2 – 1 cup milk
salt and pepper
5 or 6 clams, shelled and chopped
fish dressing
2 tomatoes, sliced
butter for cooking


1. Add milk and seasoning to beaten eggs.
2. Heat a little butter in frying pan and pour in mixture.
3. Cook until base is quite firm then add chopped clams.
4. Sprinkle with fish dressing and decorate with sliced tomatoes.
5. Finish off cooking under grill until medium brown and risen.
