Citrus Bread and Butter Pudding

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 30 minutes
Serves: 4-6


2 oz/50g softened butter
12 thick slices white bread
4 oz/110g sultanas
½ pt/300ml double cream
¾ pt/450ml milk
juice from ½ lemon and ½ orange
3 medium eggs
3 oz/75g caster sugar
pinch of nutmeg
icing sugar for dusting


1. Generously butter each slice of bread and cut into triangles.
2. Grease ovenproof dish and line base with layers of bread and sultanas.
3. Whisk together all remaining ingredients, pour over bread and bake until well risen.
4. Sprinkle with icing sugar and serve warm.
