Christmas Wine Cake

Pre-heat oven to: 170°C/325°F/Gas 3
Time in oven: 2hr 30mins in total
Makes: 40 slices


Soak the following six ingredients together for 1 week:
6 oz/175g sultanas
6 oz/175g raisins
4 oz/110g currants
3 oz/75g cherries
3 oz/75g mixed peel
½ pt/300ml sherry
6 oz/175g butter
6 oz/175g soft brown sugar
4 eggs, beaten
4 oz/110g S.R. flour
4 oz/110g plain flour
1 tsp mixed spice
1 oz/25g ground almonds
pinch of salt


1. Cream butter and sugar.
2. Add beaten eggs and remaining dry ingredients.
3. Mix well and add fruit mixture.
4. Bake in a lined 8″/20cm square tin for 1 hour then 11/2 hours at 150°C/300°F/Gas 2.
5. Remove carefully from tin and cool on wire rack.
