Christmas Pudding


1 cup plain flour
½ level tsp bicarbonate of soda
1 cup margarine, chilled and grated
1 cup white breadcrumbs
2 eggs, beaten
1 cup currants
1 cup sultanas
1 cup raisins
1 cup carrot, grated
1 cup potato, grated
1 cup demerara sugar


1. Mix all ingredients together, put into a 21/2 pint pudding basin and cover with greaseproof paper.
2. Place in pan of boiling water and steam for 1 hour if using pressure cooker (at 15 lb) or 3 hours in ordinary pan.
