Chocolate Cake

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 40 minutes
Serves: 8-10


2 oz/50g cocoa
6 tblsp boiling water
6 oz/175g S.R. flour
1 tsp baking powder
6 oz/175g sugar
6 oz/175g soft margarine
2 eggs, beaten

4 oz/110g icing sugar
2 oz/50g margarine
2 tsp milk
2 tsp cocoa powder


1. Blend cocoa powder with boiling water.
2. Place mixture in a bowl with flour, baking powder, sugar, margarine and eggs.
3. Whisk until light and fluffy.
4. Spread evenly in a greased and lined 7″/18cm diameter cake tin and bake.

1. Cream together and spread over cake when cold.
