Chicken and Plum Casserole


4 chicken joints, browned
1 onion, chopped
1 tblsp oil
salt and pepper
1/2 pt (300ml) chicken stock
2 tsp ground ginger
1 tin plums


1. Fry onion in oil and add to browned chicken in casserole dish.
2. Add salt and pepper and stock.
3. Sprinkle with ginger, add strained plums around chicken joints.
4. Bake in pre-heated oven 180°C/350°F/Gas 4 for 1 hour
