Cheese Fritters


1 egg, separated
4 oz (100g) plain flour
4 oz (100g) cheese, grated
pinch of salt
pinch of dry mustard
oil for frying


1. Beat white of egg until stiff.
2. Mix flour, cheese, salt and mustard with egg yolk and a little water.
3. Fold beaten egg white into mixture.
4. Drop dessertspoons of mixture into hot oil.
5. Fry until crispy, drain and serve hot.
