Cheese and Nut Loaf


4 oz (100g) butter
4 oz (100g) S. R. flour
4 oz (100g) wholemeal flour
4 oz (100g) wholemeal breadcrumbs
4 oz (100g) mixed nuts
6 oz (175g) cheddar cheese, grated
1 tsp mixed herbs
salt and pepper
4 oz (100g) onions finely chopped
2 eggs, beaten
1/4 pt (150ml) milk


1. Rub butter into flours to resemble fine breadcrumbs.
2. Add breadcrumbs, nuts, cheese, herbs and seasoning and mix well.
3. Sauté onions in 1/2 oz butter and add to dry ingredients.
4. Add eggs and sufficient milk to bind ingredients together.
5. Pour mixture into lightly greased 2 lb loaf tin.
6. Cover with foil and bake in a pre-heated oven 180°C/350°F/Gas 4 for 11/2 hours.
7. Remove foil and bake for a further 15 minutes.
8. Cool in tin and serve sliced with a green salad.
