Catriona’s Chicken

Pre-heat oven to: 200°C/400°F/Gas 6
Time in oven: 30 minutes
Serves: 4


4 chicken breasts, cut into bite-sized pieces
olive oil
selection of vegetables, e.g. pre-cooked potatoes, carrots, turnip, courgette, parsnip
1 garlic clove, crushed
1 tsp chilli powder
1 tsp curry powder
sprig of rosemary
2 tsp grainy mustard
4 tblsp crème fraîche


1. Fry chicken pieces in oil.
2. Put vegetables in large roasting tin and place chicken on top.
3. Sprinkle with chilli powder and curry powder.
4. Add sprig of rosemary, drizzle oil over all and put in oven.
5. Remove chicken and keep hot.
6. Put vegetables in serving dish and keep hot.
7. Put roasting dish on hob and add mustard and crème fraîche, mixing to make sauce.
8. Return chicken to roasting dish and heat through.
9. Serve vegetables with chicken pieces and sauce on top.
