Casserole of Leg of Lamb

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 2 hours
Serves: 4-6


1 leg of lamb
2 cloves garlic, crushed
2 carrots
2 tblsp mixed herbs
2 tblsp tomato purée
3 lamb stock cubes


1. Wash leg of lamb, dry with kitchen towel and place in casserole dish.
2. Add garlic, sliced carrots, herbs, tomato purée and crumbled stock cubes.
3. Pour on 11/2pt/850ml boiling water.
4. Cook in oven until tender.
5. Serve sliced, with potatoes, broccoli, peas and mint sauce.
