Campaigner Night Risotto
1. Cook 4 oz (100g) of long grain rice.
2. Prepare a selection of “extras”.
e.g. sliced onions, peppers, celery, leeks, mushrooms, drained olives, carrot sticks or any other vegetables.
3. Sauté the firmer vegetables first in hot oil in a large pan, adding the softer ones later.
4. Small pieces of meat, chicken, pepperami or fish may also be added.
5. Lastly stir in the cooked rice and heat thoroughly.
6. Season well and add a squeeze of lemon juice.
