Broccoli Quiche

Pre-heat oven to: 200°C/400°F/Gas 6
Time in oven: 35-40 minutes in total
Serves: 6-8


8 oz/225g shortcrust pastry
8 oz/225g broccoli florets
3 large eggs
½ pt/300ml single cream
salt and pepper
1 large onion, chopped
1 oz/25g butter
3 oz/75g cheddar cheese, grated


1. Roll out pastry to line a 9″/23cm diameter flan tin (see page 342).
2. Cover with greaseproof paper and layer of baking beans. Bake for 10-15 minutes.
3. Remove paper and beans and return flan to oven for 5 minutes.
4. Reduce oven temperature to 180°C/350°F/Gas 4.
5. Blanch broccoli in boiling water for 2 minutes and allow to cool.
6. Beat eggs and cream together and add salt and pepper.
7. Fry onions lightly in butter, put in pastry case and cover with broccoli.
8. Pour in eggs and grated cheese.
9. Sprinkle with small amount of grated cheese.
10. Bake for about 20 minutes until filling is set.
11. Serve hot or cold.
