Bran Muffins


Dry Mixture:
1 1/4 cups S. R. flour
1 tsp baking powder
1/2 tsp salt

Moist Mixture:
1 1/2 cups All-Bran cereal
1 1/4 cups milk
1 egg, lightly beaten
3/4 cup vegetable oil
1/2 cup honey


1. Stir dry mixture together in a bowl.
2. Steep All-Bran and milk in a small bowl until well combined.
3. Add egg to oil and honey and stir into bran-milk mixture.
4. Add moist mixture to dry mixture all at once and stir until blended, but still lumpy.
5. Fill greased muffin cups 3/4 full.
6. Bake in a pre-heated oven 200°C/400°F/Gas 6 for 20-25 minutes or until brown and springy to touch.
