Boiled Raisin Muffins
Ingredients
1/2 cup raisins
1 1/2 cups water
1/2 cup margarine
2/3 cup brown sugar
1 egg
1 tsp vanilla essence
1 1/2 cups plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
1/4 tsp salt
Method
1. Simmer raisins in water in a covered pan for 20 minutes.
2. Cream margarine and sugar. Beat in egg and essence.
3. Add raisin mixture, sift in dry ingredients and mix well.
4. Spoon mixture into greased muffin cups.
5. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 15-20 minutes.
