Beef or Chicken Fajitas

Requires: 3 hours to marinate
Serves: 8-10


1 ½ lb/700g raw steak or chicken

1 clove garlic, crushed
1 ½ tsp salt
1 ½ tsp cumin
1 tsp chilli powder
1 tsp red pepper flakes
2 tblsp olive oil
2 tblsp lemon juice

2 tblsp olive oil
1 red pepper, sliced
1 green pepper, sliced
1 onion, sliced
8-10 large flour tortillas
5 oz/150g cheese, grated
1 lettuce, shredded
6 tomatoes, chopped
8 oz/225g salsa sauce
½ pt/300ml sour cream


1. Cut steak or chicken into strips.
2. Stir meat into marinade ingredients in zip-lock bag or medium bowl and marinate for at least 3 hours or longer in refrigerator.
3. Heat olive oil in frying pan and stir-fry peppers and onion until tender.
4. Stir in marinated meat and fry to cook through.
5. Warm tortillas and fill with some cooked meat mixture, grated cheese, lettuce, tomato, salsa sauce and sour cream.
6. Roll up and serve with rice or salad.
