Banana Cake


4 oz (100g) margarine
8 oz (225g) S. R. flour
2 eggs, beaten
6 oz (175g) caster sugar
3 ripe bananas, mashed
6 oz (175g) sultanas or mixed fruit
1 oz (25g) walnuts, chopped
2 oz (50g) cherries, chopped


1. Rub margarine into flour.
2. Add rest of ingredients and mix well.
3. Spoon mixture into a greased and lined 8″ cake tin.
4. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 11/2 hours.
