Banana and Walnut Loaf


4 oz (100g) butter
6 oz (175g) caster sugar
2 large eggs, beaten
3 bananas, mashed
3 oz (75g) walnuts, chopped
8 oz (225g) S. R. flour
1/2 tsp salt


1. Cream butter and sugar, add eggs and bananas and mix well.
2. Add walnuts and fold in flour with salt.
3. Spoon mixture into a greased and base-lined 2 lb loaf tin.
4. Bake in a pre-heated oven 160°C/325°F/Gas 3 for 1 – 11/4 hours.
