Baked Apple and Almond Pudding
1 lb (450g) cooking apples, sliced
2 oz (50g) soft brown sugar
4 oz (100g) butter
4 oz (100g) caster sugar
2 eggs, beaten
4 oz (100g) ground almonds
1. Arrange sliced apples and brown sugar in an ovenproof dish.
2. Cream butter and sugar, add eggs and fold in ground almonds.
3. Spread mixture evenly on top of apples.
4. Bake in a pre-heated oven 180°C/350°F/Gas 4 for 1 hour.
