Avocado with Prawns


1 ripe avocado
1 tblsp lemon juice
3-4 oz (75-100g) large prawns
lettuce leaves
3 tblsp fromage frais
2 tblsp thick cut marmalade, warmed slightly


1. Peel avocado, remove stone, slice lengthways and pull apart to create a fan.
2. Brush with lemon juice and arrange with prawns on a bed of lettuce leaves.
3. Mix fromage frais with marmalade and serve with the avocado and prawns.
