Avocado, Mango and Prawn Salad


1″/2.5cm fresh ginger, grated
2 fl oz/50ml vegetable oil
1 fl oz/25ml olive oil
juice of ½ lime
pinch of caster sugar
salt and freshly ground pepper

1 bag mixed salad leaves
1 avocado, sliced
12 oz/350g cooked prawns
1 medium or ½ large mango, sliced


1. Thoroughly mix all dressing ingredients together, either in blender, or by shaking well in clean jar with lid.
2. Taste and add more lime juice, sugar or ginger if necessary.
3. Make a mound of lettuce leaves on serving plate.
4. Gently layer avocado, prawns and mango on top.
5. Trickle dressing over salad.
