Atlantic Fish Chowder


1 1/2 lb (675g) fresh or frozen seafood eg. shrimp, mussels, fish fillets of any kind
2 tblsp margarine
2 cups onion, thinly sliced
1 cup celery slices
1 cup hot water
2 cups raw potatoes, diced
1 cup carrot slices
1 tsp salt
2 cups milk
1/2 cup cheddar cheese, shredded


1. Sauté onion and celery slices in margarine in large saucepan.
2. Add water, potatoes, carrots and salt, bring to boil and simmer for 10 minutes.
3. Cut fish into bite size pieces and add to the vegetables, cover and simmer for 10 minutes longer.
4. Add milk and cheese, heat over low/medium heat stirring gently until cheese melts.
5. DO NOT BOIL. Season to taste.
