Apple and Walnut Cake

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 40-45 minutes
Makes: 12-14 slices


3 oz/75g margarine
5 oz/150g caster sugar
2 eggs, beaten
7 oz/200g plain flour
2 ½ level tsp baking powder
½ tsp salt
½ tsp cinnamon
pinch of nutmeg
2 oz/50g walnuts
2 oz/50g raisins
1 apple, diced
2 tblsp milk
Glacé Icing:
4 oz/110g icing sugar
1 – 1½ tblsp warm water


1. Cream margarine and sugar and add beaten eggs with a little flour.
2. Add remaining dry ingredients.
3. Fold in walnuts, raisins, apple and milk.
4. Spoon into a greased and lined 2 lb/900g loaf tin.
5. Bake until nicely browned and firm to the touch.
6. Sift icing sugar into bowl and add water. Stir with wooden spoon until smooth.
7. When cold, decorate with glacé icing and walnuts.
