Anzac Biscuits

Pre-heat oven to: 150°C/300°F/Gas 2
Time in oven: 20 minutes
Makes: 34-36


3 ½ oz/85g rolled oats
2 ½ oz/60g desiccated coconut
4 oz/110g plain flour
7 oz/200g sugar
2 tblsp golden syrup
4 oz/110g butter
½ tsp bicarbonate of soda
1 tblsp water


1. Mix together oats, coconut, flour and sugar.
2. Melt syrup and butter together.
3. Mix bicarbonate of soda with boiling water and add to melted butter and syrup.
4. Add to dry ingredients.
5. Place tblsp of mixture on greased tray, allowing room for spreading.
6. Loosen while warm and cool on trays.
