American Nut Chocolate Brownies

Pre-heat oven to: 180°C/350°F/Gas 4
Time in oven: 30 minutes
Makes: 12-18


4 oz/110g nuts mixed e.g. pecan, brazil, walnut, macadamia
2 oz/50g dark chocolate
4 oz/110g butter
2 oz/50g plain flour
1 tsp baking powder
¼ tsp salt
6 oz/175g granulated sugar
2 large eggs


1. Toast nuts slightly on tray in oven for 15 minutes and chop into chunks.
2. Melt chocolate and butter over hot water and beat.
3. Add all other ingredients and mix well.
4. Line an oblong 7″ x 11″/18cm x 28cm tin with baking parchment and spread mixture over evenly.
5. Place in oven and bake. Brownies should be springy on top when ready.
6. Leave to cool for 10 minutes, then cut up still in the tin into large squares and lift each out on to a cooling tray.
Note: This is not a cake. The inside will be, and should be, soft – even damp, and crisp on the outside. It will shrink a little as it cools.
