Almond Tart


Shortcrust pastry (see Cherry Franzipan)

4 oz (100g) ground almonds
2 large eggs, beaten

2 cups caster sugar
2 tsp almond essence


1. Line 8″ flan tin with pastry and spread with jam.
2. Mix together all ingredients (except 1/4 cup sugar).
3. Spread mixture into prepared pastry case and sprinkle with remaining sugar.
4. Bake in a pre-heated oven 160°C/325°F/Gas 3 until golden brown.
